Pineapple, star fruit and blood orange salad

Serve 6 to 8


1 large pineapple, peeled, cored and cut into ¾ inch pieces

3 medium blood or navel oranges, peeled, halved lengthwise and cut crosswise into ¼ inch thick half moons. Reserve any juice for later use

2 medium star fruit, trimmed, very thinly sliced

1 small papaya, peeled, seeded, and cut into 1 inch pieces.

1 tsp vanilla extract

1 tsp agave nectar (or honey)

10 to 12 mint leaves, thinly sliced

Salt and pepper to taste


Combine the pineapple, oranges and star fruit in a bowl. In a small bowl mix the agave, orange juice and vanilla until well blended. Pour over the pineapple mix and toss gently with a pinch of salt and pepper. Let sit 10 minutes at room temperature; more juice will release from the fruit. When ready to serve add papaya and mint. Toss one more time then plate accordingly. If you wish, feel free to add greens to your salad. Something like arugula or watercress will go perfectly with it.
